Revive Congee Recipe
A recipe from my heart felt kitchen to yours. I hope you find comfort in this congee recipe when you are recovering from birth, hard days of parenting, and perhaps the ill spells through the years. It is filled with ingredients to warm the body and support the blood to flow so you body is supported in its recovery. This is a staple recipe for the mothers and parents I support as their postpartum doula here in Southern lutruwita, Tasmania.

Serves 4 approximately | Prep time: 7 minutes | Cooking time: 1.5 - 2 hours
Ingredients:
1 cup x white jasmine rice or brown rice (takes an extra ten minutes)
3 cups x stock (vegetable/chicken/beef)
1 cup x water
1 inch ginger knob finely grated
2 cloves of garlic finely grated
1 tsp mineral salt (or preferred salt)
sesame oil to dress
soy sauce or tamari to dress
Method
In a medium saucepan add rice and 3 cups of stock, and bring to boil.
Once boiling reduce to simmer. Half cover the pot. Stir occasionally so no rice sticks to the bottom. Cook rice till the grain has burst and broken down into congee. Add extra cup of water as needed to thin if it starts to thicken and stick to bottom of pot.
Once the congee is done add ginger, garlic, and salt and stir through.
Serve in bowl with sesame oil and soy sauce, plus desired toppings.

sauteed seasonal greens and garlic
fried/scrambled/poached egg
shallow fried tofu
braised chicken
fresh coriander and spring onion
toasted peanuts/sesame or sunflower seeds
